Allium

Topping off my day last night was a memorable dinner at a restaurant that for some reason I've always held off from visiting: #Allium in Legaspi Village. Well - I now consider it one of the great underrated fine dining experiences in the city. Their new "Carte Blanche" tasting menu is full of top flight fresh ingredients and executed in a manner that won't make you blink. In other words, it's delicious. The chef/owner, Mark Tan, has great cooking chops. He clearly respects his ingredients, and flexes his creativity while incorporating both old and new techniques. Snoop around and CHECK IT. While not cheap, of course, I think it's very much worth your hard earned peso.😁 I'll be back for sure.

This ball of foie gras, whom I've lovingly dubbed "Iron Man", is brilliant. You break it with your spoon, and inside is a gelée of beets.
